Easy Meals

Now for our occasional posting of easy family meals: 

Tonight we had an old favorite, Beany Weeny Waikiki. 

It’s kind of a sweet and sour bean and hot dog dish, and it’s easy enough that the kids can almost make it themselves.

Here’s the recipe, though I usually just throw things in the pot until it looks and tastes right.  The picture is what was left after supper tonight.  It was a hit! 

Beany Weeny Waikiki

Saute in large pot/Dutch oven until cooked through:

1 T. butter

1 onion, diced

1/2 green pepper, diced

1 can pineapple chunks or about 2 c. pineapple tidbits—reserve liquid

1 package hot dogs, cut into slices

Add the following sauce ingredients:

reserved pineapple juice—if there isn’t much, I just add it with the pineapple

2 T. apple cider vinegar (optional)

1 T. soy sauce (or more)

1/2 c. ketchup (or more)

1/2 c. brown sugar (or more)

Simmer until bubbly and slightly thick, then add:

2 cans pork & beans (the 15 oz. size)

Heat through, or simmer until everyone is ready for supper. 

This is a very forgiving recipe; you can adjust the ingredients to taste or according to what you have on hand.  It can be served over chow mein noodles, but we usually just eat it by itself.
