China Buffet at Home!

We had a quick supper that got many thumbs up last night! It was easy, quick, and relatively inexpensive (compared to driving to ChinaTown in Yankton). Here are the secret ingredients:
1 bag frozen popcorn chicken
1 bottle Iron Chef General Tso sauce
1 c. white rice

2 packages ramen noodles
leftover vegetables (baby carrots, cabbage, onions, frozen peas, etc.)
Soy Vay hoisin teriyaki sauce

We started the rice (2 c. water, 1 c. rice, 20 min on the stove), dropped the chicken in the deep fryer, and sauteed the vegetables in a little oil. While those were cooking, I boiled some water and poured it over the ramen noodles to cook them enough.

Next, we put about half of the popcorn chicken into another pan and poured some of the General Tso sauce over it to warm. The other half was reserved for children who don't like spicy sauce. :)
To finish the noodle dish, we dumped the drained noodles and some teriyaki sauce over the sauteed vegetables and stirred until everything was coated.

Voila! A happy meal for 5, with leftovers, for about $10.
