Zucchini!

We've been blessed with the gift of zucchini! We didn't grow any of our own this year, but the wonderful squash just keeps appearing in our house and car!
Our family enjoys zucchini bread and muffins, but the overall favorite is Fried Zucchini.
Here's our recipe:
1 medium zucchini, peeled and sliced very thin (I use the Pampered Chef mandolin slicer)
1 egg, beaten with fork
1 sleeve of saltine or Ritz crackers, crushed fine with food processor

Dip the zucchini slices in egg
Drop slices into cracker crumbs one at a time
Pick up with fork
Drop into hot oil (1/4 inch or so) in electric skillet
Fry until light brown on both sides, flipping as needed

Enjoy plain or with your favorite mustard
Emily and I used to draw smiley faces on each slice...
